Superman Cupcakes




Hello!
Guess who decided to start a blog? I'll be updating this space with my baking and food adventures and hopefully it won't be a bore to read hahaha.

I've been dying to make something off Nerdy Nummies. So i took my own spin on the  Superman Cupcakes yesterday! I always thought that making these cupcake toppers would be so difficult but after watching NN's video tutorial, the task didn't seem so daunting anymore :)




I used one of my favourite chocolate cupcake recipes because I'm not exactly a fan of box cake mixes. As for the Superman toppers, I piped them out using royal icing using this foolproof recipe that i always go back to.

Chocolate Cupcakes
(Yields 12)

Ingredients

  • 115g butter,unsalted
  • 225g granulated sugar (i reduced this to 170g)
  • 2 eggs
  • 1 tsp vanilla extract
  • 3/4 cup milk
  • 145g all-purpose flour
  • 3 tbsp cocoa powder
  • 3/4 tsp baking soda
  • pinch of salt (omit this if using salted butter)
Directions

  1. Preheat oven to 180°C.
  2. Sift together the dry ingredients - flour,cocoa powder,baking soda, salt in one bowl.
  3. Cream butter and sugar till light and fluffy in a separate bowl. Beat in eggs one at a time. Stir in vanilla extract.
  4. Combine in dry ingredients alternating with the milk.(flour-->milk-->flour) , mixing until just incorporated. 
  5. Pour into cupcake liners and bake for 20-25minutes, or when a skewer inserted comes out clean.
  6. Allow cake to cool before frosting.

I opted for a vanilla buttercream frosting which i tinted blue. Here's the recipe:

Vanilla Buttercream

Ingredients

  • 125g butter,unsalted
  • 200-350g confectioner's sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp milk
Directions
  1. Beat the butter in a large bowl until light & fluffy.
  2. Add in the sugar, one tbsp at a time. Thereafter add the vanilla extract and milk until a desired consistency is obtained.
